Home Baked Nutty Granola

Ingredients

  • 2 Cups Rolled Oats

  • 1 Cup raw Almonds, chopped

  • 1 Cup raw Walnuts, chopped

  • 1/4 cup raw Pumpkin seeds

  • 2 tbsp ground flax seeds

  • 1 tsp ground cinnamon

  • 1/4 tsp salt

  • 1/4 cup extra virgin olive oil

  • 1/4 cup honey

  • 1 tsp vanilla extract

  • 1/4 cup cranberries or goji berries, chopped

  • 1/4 cup shredded coconut

Method:


  • Preheat oven to 165 degrees celsius

  • In a large bowl, combine the rolled oats, almonds, walnuts, sunflower seeds, pumpkin seeds, ground flax seeds, ground cinnamon and salt.

  • In a seperate bowl, combine Olive oil, honey, vanilla extract and add a lil more cinnamon. 

  • Combine the oil, honey mixture in with the oats and nuts and combine well. 

  • Line a baking tray with baking paper and evenly coat the tray with the granola mix.

  • Bake until golden, 20-25minuts, stirring halfway through.

  • Let cool and mix in shredded coconut, Goji Berries or Currants (or both).
