Ingredients
2 Cups Rolled Oats
1 Cup raw Almonds, chopped
1 Cup raw Walnuts, chopped
1/4 cup raw Pumpkin seeds
2 tbsp ground flax seeds
1 tsp ground cinnamon
1/4 tsp salt
1/4 cup extra virgin olive oil
1/4 cup honey
1 tsp vanilla extract
1/4 cup cranberries or goji berries, chopped
1/4 cup shredded coconut
Method:
Preheat oven to 165 degrees celsius
In a large bowl, combine the rolled oats, almonds, walnuts, sunflower seeds, pumpkin seeds, ground flax seeds, ground cinnamon and salt.
In a seperate bowl, combine Olive oil, honey, vanilla extract and add a lil more cinnamon.
Combine the oil, honey mixture in with the oats and nuts and combine well.
Line a baking tray with baking paper and evenly coat the tray with the granola mix.
Bake until golden, 20-25minuts, stirring halfway through.
Let cool and mix in shredded coconut, Goji Berries or Currants (or both).
